Recipe // Balsamic-Glazed Sweet Potatoes

Ingredients:
For the potatoes:
β 3 sweet potatoes, peeled and sliced into ΒΌ-inch rounds
β 1 Β½ tbsp cinnamon
β 2 tsp black pepper
β 1 tbsp salt
β 1 Β½ tbsp olive oil
For the glaze:
β 2 tbsp maple syrup
β 1 1/2 tbsp olive oil
β 1 tbsp balsamic vinegar
β 1 tsp cinnamon
β 1 tsp salt
β 1/2 tsp black pepper
Toppings:
β Pecans, chopped
β Red pepper flakes
β Celtic salt
Directions:
β Preheat your oven to 400Β°F (200Β°C).
β Place a cast-iron skillet over low heat to warm up.
β In a large mixing bowl, combine the sweet potato slices with olive oil, cinnamon, salt, and pepper. Toss until evenly coated.
β Lightly coat the heated skillet with olive oil. Sear the sweet potato slices in batches for 5-7 minutes per side until golden brown. Avoid overcrowding the pan for even cooking.
β While the sweet potatoes sear, whisk together maple syrup, olive oil, balsamic vinegar, cinnamon, salt, and pepper in a small bowl.
β Transfer the seared sweet potato slices to a parchment-lined baking sheet. Brush the glaze generously over one side of each slice.
β Bake for 10 minutes, then flip the slices, brush the other side with the glaze, and bake for an additional 5-7 minutes until caramelized and tender.
β Plate the sweet potatoes and garnish with chopped pecans, red pepper flakes, flaky salt, and any leftover glaze. Enjoy!
