Recipe // Balsamic-Glazed Sweet Potatoes

Ingredients

For the potatoes:
3 sweet potatoes, peeled and sliced into ¼-inch rounds
1 ½ tbsp cinnamon
2 tsp black pepper
1 tbsp salt
1 ½ tbsp olive oil

For the glaze:
2 tbsp maple syrup
1 1/2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp cinnamon
1 tsp salt
1/2 tsp black pepper

Toppings:
Pecans, chopped
Red pepper flakes
Celtic salt

Directions

1. Preheat your oven to 400°F (200°C).
2. Place a cast-iron skillet over low heat to warm up.
3. In a large mixing bowl, combine the sweet potato slices with olive oil, cinnamon, salt, and pepper. Toss until evenly coated.
4. Lightly coat the heated skillet with olive oil. Sear the sweet potato slices in batches for 5-7 minutes per side until golden brown. Avoid overcrowding the pan for even cooking.
5. While the sweet potatoes sear, whisk together maple syrup, olive oil, balsamic vinegar, cinnamon, salt, and pepper in a small bowl.
6. Transfer the seared sweet potato slices to a parchment-lined baking sheet. Brush the glaze generously over one side of each slice.
7. Bake for 10 minutes, then flip the slices, brush the other side with the glaze, and bake for an additional 5-7 minutes until caramelized and tender.
8. Plate the sweet potatoes and garnish with chopped pecans, red pepper flakes, flaky salt, and any leftover glaze. Enjoy!
