Recipe // Matcha Shortbread Cookies
Bookmark for your cookie exchanges, cookie decorating parties, and cookies for Santa! These colors come together using our grade-a matcha, beet root powder, and other natural, waste-free ingredients in the dough and icing. No artificial dyes needed π
Ingredients:
β 1 cup unsalted butter, softened
β 2-3 tbsp grade-a matcha powder
β Β½ cup powdered sugar, sifted
β 2 cups all purpose flour
β 1/4 tsp salt
β 1 tsp vanilla extract
Instructions:
Cookies:
β Cream matcha directly into softened butter.
β Add powdered sugar and beat until smooth.
β Add flour + salt and mix just until a dough forms.
β Chill 1 hour.
β Roll out into a slab and cut shapes.
β Bake at 310F for 12-15 minutes, until the tops look set but not browned.
β Transfer to baking rack to cool.
*For white dough, repeat recipe without matcha.
Simple Glaze Icing:
β 1 cup powdered sugar, sifted
β 1-2 tbsp milk or water
β Β½ tsp vanilla
πGreen: 1-2 tsp re_ matcha powder
πYellow: Β½ tsp re_ turmeric
π§βπRed: 1 tsp re_ beet root powder + Β½ tsp hibiscus powder (2-3 drops of lemon juice will keep the pigment bright)
β Mix the milk or water and vanilla with colored powder, stir well.
β Add powdered sugar gradually and blend until smooth. For line work consistency, the texture should resemble toothpaste.
β Let rest for 5-10 minutes to allow pigments to fully hydrate.
β Add to parchment paper or reusable piping bag.
