Recipe // Shiitake Congee
It’s fall somewhere, and we’ve been making this delicious and easy plant-based Congee to get in the spirit. Head to the farmer’s market for the fresh ginger, lemongrass and green onions, and get the rest package-free @ re_
Ingredients:
→ 1 cup jasmine rice, washed
→ 8 cups filtered water
→ 2 tbsp vegetable broth powder
→ ½ cup dried shiitake mushrooms
→ ¼ c fresh ginger, chopped thin
→ 1 large leaf of kombu
→ 1 stalk lemongrass, chopped in half and smashed
→ Salt to taste
Garnish
→ Fresh green onions, chopped
→ Toasted sesame seeds
→ Drizzle of tamari and/or sesame oil
Directions:
→ Start by rinsing the jasmine rice.
→ In a large pot, add the rice, water, vegetable broth powder, dried mushrooms, ginger, kombu, and lemongrass.
→ Bring to a boil and simmer for 30-35 minutes stirring occasionally. Once the rice is broken down the congee should look similar to oatmeal.
→ Add salt for your desired taste. Garnish with green onions, sesame seeds, chili flakes and a drizzle of sesame oil and/or tamari. Enjoy!
