Ingredients

Skewers

→ 1 cup soy curls

→ 1 sweet onion

→ 1 red bell pepper

Marinade

→ 2 tbsp olive oil

→ 5 tbsp tamari

→ 2 tbsp shiitake broth (3-4 slices of dried shiitakes soaked in hot water)

→ 4 tbsp nutritional yeast

→ 1.5 tsp garlic powder

→ 1 tsp smoked paprika

→ 1 tsp ground black pepper

→ ¼ tsp liquid smoke

→ 1 tbsp maple syrup

Garnish

→ 2 tbsp of your favorite bbq sauce for dipping or drizzling

Directions:

→ Start by soaking the soy curls in water for 10 minutes to hydrate them. Drain and squeeze out any excess water.

→ In a small bowl combine 2 tbsp warm water and 3-4 slices of dried shiitake to make your shiitake broth. Set aside for 5 minutes.

→ In a larger bowl add the olive oil, tamari, shiitake broth, nutritional yeast, garlic powder, smoked paprika, pepper, liquid smoke, and maple syrup. Mix until incorporated.

→ Transfer soy curls to the marinade and toss to evenly coat. Set aside for 20 minutes to 1 hour.
