Recipe // Spring Green White Bean Pasta

Seeing green? ☘️ Here’s a fresh Spring Green White Bean Pasta to get your greens in for dinner with minimal prep and cleanup.

Ingredients:

→ 8oz sea shell semolina pasta, or 1 full 32 oz re_ jar
→ 1 cup cooked cannellini beans, about ½ cup dried
→ 1 cup spinach
→ ½ cup zucchini, chopped
→ 1 small carrot, chopped
→ 3 cloves garlic
→ 2 tbsp olive oil
→ zest and juice of ½ lemon
→ ½ tsp salt
→ ½-¾ cup reserved pasta water

Directions:

→ Bring 3 quarts of water to a boil, then add salt and pasta and stir. Cook for 8-9 minutes until desired tenderness, stirring occasionally.
→ Before draining, reserve ¾ cup pasta water. Drain pasta and return it to the same pot.
→ In a blender, combine white beans, spinach, zucchini, carrot, garlic, olive oil, lemon zest + juice, salt + pepper, and ½ cup pasta water. Blend until smooth and creamy. Add more pasta water as needed to thin.
→ Pour the sauce directly into the pot with the pasta and warm gently for 1-2 minutes, stirring until coated.
