Recipe // Blueberry Buckwheat Pancake Mix
A hearty, wholesome blend of buckwheat and all-purpose flour with a touch of sweetness and bursts of dried blueberries π« This 16oz jar makes about 8 fluffy, nutty pancakes β perfect for a cozy weekend breakfast or an easy make-ahead gift.
Ingredients
β 1 cup buckwheat flour
β ΒΎ cup all-purpose flour (or gluten-free substitute)
β 2 tbsp coconut sugar (or brown sugar)
β 2 tsp baking powder
β Β½ tsp baking soda
β Β½ tsp salt
β Β½ tsp cinnamon
β ΒΌ cup dried blueberries
Layering
β Buckwheat flour
β All-purpose flour
β Coconut sugar
β Baking powder + baking soda + salt + cinnamon β mix these together, then add as one layer for even distribution
β Dried blueberries (or chocolate chips, if preferred)
Making the Pancakes
β ΒΎ cup milk or plant-based milk
β 1 egg
β 1 tbsp melted butter
Cooking Instructions
β Shake dry mix before using.
β Whisk together 1 cup dry mix with ΒΎ cup milk, 1 egg, and 1 tbsp melted butter in a large bowl.
β Cook on a lightly oiled pan over medium heat until bubbles form, then flip and cook 1β2 minutes more.
β Serve warm with maple syrup, fresh fruit, or spiced butter.
