Our go-to summer lunch : the Chickpea and Kimchi Sammy

Ingredients

Directions

  • Put the chickpeas in a medium bowl and mash slightly with a fork or potato masher.
  • Add celery, red pepper, jalapeno, green onion, dill, garlic, and kimchi. Season with nutritional yeast, salt, and pepper. Stir to combine.
  • Add vegenaise and mustard. Taste and adjust the seasonings as needed.
  • Assemble sandwiches, serve immediately.
