Recipe // Chickpea and Kimchi Sandwich
Our go-to summer lunch : the Chickpea and Kimchi Sammy
Ingredients:
→ 2 slices of Bub and Grandmas Sourdough Bread
→ 2 tbsp kimchi, chopped (available in store)
→ 1.5 cups cooked chickpeas
→ 1 stalk of celery, finely diced
→ 1/2 red bell pepper, seeded and finely diced
→ 1/2 jalapeno pepper, finely chopped
→ 1 green onion, thinly sliced
→ 2 tbsp fresh dill (or 1 tbsp dried)
→ 1 clove garlic, very finely minced
→ 1 tbsp nutritional yeast
→ 1/2 tsp black lava salt
→ 1/2 tsp ground black pepper
→ 1/4 cup Vegenaise (available in store)
→ 1 tsp dijon or stone ground mustard
Directions:
→ Put the chickpeas in a medium bowl and mash slightly with a fork or potato masher.
→ Add celery, red pepper, jalapeno, green onion, dill, garlic, and kimchi. Season with nutritional yeast, salt, and pepper. Stir to combine.
→ Add vegenaise and mustard. Taste and adjust the seasonings as needed.
→ Assemble sandwiches, serve immediately.
