Recipe // Coconut Curry Chickpeas with Heyday Canning Co

Ingredients
1 can Heyday Coconut Curry Chickpeas
1 cup wild rice
1 head of broccoli, chopped into florets
1 cup of sweet potato, cubed
2 tbsps sesame seeds, toasted
2 tbsps olive oil
1/4 cup water
Directions
→ Add 1 cup wild rice to 4 cups boiling water.
→ Reduce heat, cover and simmer 55-65 minutes or until desired texture.
→ Drain excess liquid and season to taste.
→ Heat olive oil over medium heat, add broccoli and sweet potato and cook uncovered, about 2 minutes. Add water, cover with a lid and continue cooking for about 6 more minutes, stirring occasionally.
→ Add can of Heyday Coconut Curry Chickpeas and cook for 2 more minutes, until warm.
→ Season with salt, pepper, optional to add garlic powder, turmeric and lime juice.
→ Remove from heat, serve on rice and sprinkle with sesame seeds.
