Recipe // Pan Con Tomate

Ingredients:
β 2-3 ripe heirloom tomatoes
β 1 glug olive oil
β 1 tsp or so of red wine vinegar
β 1 grated clove of garlic
β Salt and pepper to taste
β Slice of toasted sourdough bread
To garnish:
β Basil, optional
β Celtic sea salt
Directions:
β In a sieve over a bowl, grate your heirloom tomatoes then discard the liquid (itβs a tasty drink or even a mixer for a cocktail).
β Add the pulp to a bowl and add the olive oil, red wine vinegar, garlic, salt and pepper. Give it a mix and add to a piece of toast.
β Optional: garnish with fresh basil
