Recipe // Pan Con Tomate

Ingredients

2-3 ripe heirloom tomatoes
1 glug olive oil
1 tsp or so of red wine vinegar
1 grated clove of garlic
Salt and pepper to taste
Slice of toasted sourdough bread
To garnish:
Basil, optional
Celtic sea salt

Directions

1. In a sieve over a bowl, grate your heirloom tomatoes then discard the liquid (it’s a tasty drink or even a mixer for a cocktail).
2. Add the pulp to a bowl and add the olive oil, red wine vinegar, garlic, salt and pepper. Give it a mix and add to a piece of toast.
3. Optional: garnish with fresh basil
