Recipe // Pan Con Tomate

Ingredients:

→ 2-3 ripe heirloom tomatoes
→ 1 glug olive oil
→ 1 tsp or so of red wine vinegar
→ 1 grated clove of garlic
→ Salt and pepper to taste
→ Slice of toasted sourdough bread
To garnish:
→ Basil, optional
→ Celtic sea salt

Directions:

→ In a sieve over a bowl, grate your heirloom tomatoes then discard the liquid (it’s a tasty drink or even a mixer for a cocktail).
→ Add the pulp to a bowl and add the olive oil, red wine vinegar, garlic, salt and pepper. Give it a mix and add to a piece of toast.
→ Optional: garnish with fresh basil
