Recipe // Pan Con Tomate

Ingredients:

β†’ 2-3 ripe heirloom tomatoes
β†’ 1 glug olive oil
β†’ 1 tsp or so of red wine vinegar
β†’ 1 grated clove of garlic
β†’ Salt and pepper to taste
β†’ Slice of toasted sourdough bread
To garnish:
β†’ Basil, optional
β†’ Celtic sea salt

Directions:

β†’ In a sieve over a bowl, grate your heirloom tomatoes then discard the liquid (it’s a tasty drink or even a mixer for a cocktail).
β†’ Add the pulp to a bowl and add the olive oil, red wine vinegar, garlic, salt and pepper. Give it a mix and add to a piece of toast.
β†’ Optional: garnish with fresh basil
