Smoky summer tacos 🌮 This shredded tofu taco filling is easy to make and rings up at only $2.11 per serving 👌
2 tbsp olive oil
½ large onion, finely diced
1 large red bell pepper, finely diced
1 medium jalapeño, seeded and finely diced
4 medium garlic cloves, minced
1 tsp chili powder
1 ½ tsp smoked paprika
¾ tsp sea salt
1 tsp black pepper
2-3 tbsp adobo sauce (from a can of chipotle peppers in adobo)
¼ cup water
16 oz. firm tofu, drained and shredded
1 tsp agave
Corn tortillas
1. Add onion to the heated oil in a large skillet over medium and cook for 3-5 minutes until translucent. Add bell pepper and jalapeño and cook for another 2-3 minutes. Add the garlic and toss to combine, then add your seasonings and mix. Add adobo sauce and water and mix again. Add your agave.
2. Add the shredded tofu and toss. Spread into an even layer, turn up the heat slightly and cook another 2-3 minutes until the bottom of the tofu starts to sizzle. Adjust water, adobo sauce, or salt if needed.
3. Add to your tacos with your toppings of choice and enjoy!
