Recipe // Tangy Roasted Cauliflower

Ingredients

1 cauliflower, cut into pieces
1 medium red onion, chopped
2 Tbsp olive oil
1 tsp cumin powder
½ tsp cardamom
1 tsp salt

2 tsp lemon zest
Juice of 1 lemon
¼ cup parsley
½ cup pistachios

Directions

Roast the cauliflower and red onion with olive oil, cumin, cardamom and salt at 400 degrees for 20-25 minutes or until golden brown. Top with lemon + zest, parsley and pistachios
