Ingredients:
→ 1 cauliflower, cut into pieces
→ 1 medium red onion, chopped
→ 2 Tbsp olive oil
→ 1 tsp cumin powder
→ ½ tsp cardamom
→ 1 tsp salt
→ 2 tsp lemon zest
→ Juice of 1 lemon
→ ¼ cup parsley
→ ½ cup pistachios
Directions:
→ Roast the cauliflower and red onion with olive oil, cumin, cardamom and salt at 400 degrees for 20-25 minutes or until golden brown.
→ Top with lemon + zest, parsley and pistachios
