Recipe // Vegan Gingerbread Cookies

Ingredients

¼ cup vegan butter
½ cup brown sugar
⅓ cup maple syrup
1 flax egg (1 Tbsp ground flaxseed + 3 Tbsp hot water)
½ tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
¼ tsp salt
2 tsp ground ginger
2 tsp ground cinnamon
¼ tsp allspice

Directions

1. Set your oven to 350°F (180°C).
2. In a bowl, cream together the vegan butter and light brown sugar. Add maple syrup, flax egg (flaxseed + hot water), and vanilla extract. Mix until smooth.
3. In a separate bowl, sift together the flour, baking soda, salt, ginger, cinnamon, and allspice.
4. Gradually add the dry ingredients to the wet mixture and mix until it forms a thick dough.
5. Roll out about 2-3 tablespoons of dough into a ball and place cookies on a parchment-lined baking tray.
6. Bake for 10-12 minutes, or until firm. Let the cookies cool completely.
7. Your vegan gingerbread cookies are ready to spread holiday cheer!
