Recipe // Vegan Gingerbread Cookies

Ingredients:
→ ¼ cup vegan butter
→ ½ cup brown sugar
→ ⅓ cup maple syrup
→ 1 flax egg (1 Tbsp ground flaxseed + 3 Tbsp hot water)
→ ½ tsp vanilla extract
→ 2 cups all-purpose flour
→ 1 tsp baking soda
→ ¼ tsp salt
→ 2 tsp ground ginger
→ 2 tsp ground cinnamon
→ ¼ tsp allspice
Directions:
→ Set your oven to 350°F (180°C).
→ In a bowl, cream together the vegan butter and light brown sugar. Add maple syrup, flax egg (flaxseed + hot water), and vanilla extract. Mix until smooth.
→ In a separate bowl, sift together the flour, baking soda, salt, ginger, cinnamon, and allspice.
→ Gradually add the dry ingredients to the wet mixture and mix until it forms a thick dough.
→ Roll out about 2-3 tablespoons of dough into a ball and place cookies on a parchment-lined baking tray.
→ Bake for 10-12 minutes, or until firm. Let the cookies cool completely.
