Recipe // Pitaya Superfood Frozen Yogurt Bark
Keep cool with a pitaya fro-yo bark full of summery flavors π₯₯
Rich in color, antioxidants, and nutrients like magnesium, iron, and zinc, this powder adds a pretty punch to frozen yogurt bark and other treats.

Base:
β 2 cups whole milk yogurt
β 2 tbsp pitaya powder
β 1 tbsp maple syrup or honey
β 1 tsp vanilla extract
β Pinch sea salt
Toppings:
β β
cup dried mango, chopped
β Β½ cup blueberries
β 1 kiwi, sliced into half moons
β 2 tbsp raw pistachios, shelled
β 2 tbsp toasted coconut chips
β 1 tbsp hempseed
β 1 tbsp cacao nibs
β Light drizzle almond butter
Instructions:
β Whisk together yogurt, pitaya powder, maple syrup, vanilla, and sea salt until smooth and bright pink.
β Pour onto a parchment-lined quarter sheet pan or a walled dish, pouring in the center so that it spreads evenly.
β Arrange mango, blueberries, and kiwi on top. Sprinkle pistachios, hempseed, coconut chips and cacao nibs. Add the almond butter. If itβs too thick, add 1 tsp of water at a time and mix until itβs the right consistency.
β Freeze for 3-4 hours or until completely firm. Break or cut into pieces and serve immediately.
