Salad:

2 pounds baby yellow potatoes
1 Tbsp apple cider vinegar
1 cup diced green onion
¼ cup fresh chopped parsley

Dressing:
2 ½ Tbsp Dijon mustard
3 cloves garlic, minced
1 tsp salt
3 Tbsp red wine vinegar
1 Tbsp apple cider vinegar
3 Tbsp olive oil
1 ½ Tbsp dried dill

Directions

Arrange the potatoes in a large dish with the other salad ingredients. Mix the dressing and pour over the salad. Toss.
