Recipe // Pumpkin Mac & Cheese

Ingredients:

→ 12 oz macaroni noodles
→ 1.5 cups russet potato, chopped
→ 1/2 cup onion, diced
→ 1/3 cup carrot, diced
→ 1.5 cups water
→ 1 cups pumpkin puree
→ 2 tbsp cornstarch
→ 1 tsp salt
→ 1/2 tsp garlic powder
→ 1/4 tsp pumpkin pie spice
→ 1 tbsp olive oil
→ 1 tbsp nutritional yeast

Directions:

→ Start by dicing up your potato, onion, carrot and add them to a medium size pot with the water.
→ Bring to boil and then turn down to simmer, cover, and let cook for 15 minutes.
→ Meanwhile, cook your macaroni noodles to package instructions.
→ Once veggies are cooked, add the mix AND the remaining water to a high speed blender. Add in the pumpkin, cornstarch, salt, garlic powder, pumpkin pie spice, olive oil, and nutritional yeast. Blend on high for a few minutes until creamy.
→ Pour pumpkin sauce over cooked macaroni noodles, mix and enjoy.
→ Top with freshly ground pepper, more nutritional yeast, or red pepper flakes.
