Recipe // Pumpkin Mac & Cheese

Ingredients:
ā 12 oz macaroni noodles
ā 1.5 cups russet potato, chopped
ā 1/2 cup onion, diced
ā 1/3 cup carrot, diced
ā 1.5 cups water
ā 1 cups pumpkin puree
ā 2 tbsp cornstarch
ā 1 tsp salt
ā 1/2 tsp garlic powder
ā 1/4 tsp pumpkin pie spice
ā 1 tbsp olive oil
ā 1 tbsp nutritional yeast
Directions:
ā Start by dicing up your potato, onion, carrot and add them to a medium size pot with the water.
ā Bring to boil and then turn down to simmer, cover, and let cook for 15 minutes.
ā Meanwhile, cook your macaroni noodles to package instructions.
ā Once veggies are cooked, add the mix AND the remaining water to a high speed blender. Add in the pumpkin, cornstarch, salt, garlic powder, pumpkin pie spice, olive oil, and nutritional yeast. Blend on high for a few minutes until creamy.
ā Pour pumpkin sauce over cooked macaroni noodles, mix and enjoy.
ā Top with freshly ground pepper, more nutritional yeast, or red pepper flakes.
