Recipe // Soba Cabbage Salad

Easy eats this week: a soba cabbage salad to enjoy now or refrigerate for later 🥢

Ingredients

Salad:

½ lb soba noodles, cooked
1 cup red cabbage, thinly sliced
1 cup green cabbage, thinly sliced
2 green onions, thinly sliced
¼ cup fresh cilantro, chopped
½ cup toasted cashews

Dressing:
¼ cup rice vinegar
2 tbsp sesame oil
2 tbsp olive oil
2 tbsp agave
1 tbsp tamari
Salt to taste

Directions

Start by cooking off your soba noodles. Drain and set aside. To a large bowl add the cooked soba, cabbage (red and green), green onions, cilantro, and cashews.

Set aside and make the dressing by combining the rice vinegar, sesame oil, olive oil, agave, tamari, and salt. Mix to combine. Add the dressing to the salad and toss. Serve at room temperature or refrigerate! Enjoy :)
